Chocolate Cake

I discovered this recipe as an advertisement for Baker's Chocolate my mother had torn out of a magazine years ago.


  • 2 1/4 cups flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 stick butter
  • 2 1/4 cups brown sugar
  • 3 eggs
  • 3 oz unsweetened chocolate
  • 1 1/2 teaspoons vanilla
  • 1 cup sour cream
  • 1 cup boiling water
  • 1 batch Chocolate Frosting


  1. Preheat the oven to 350°.
  2. Melt the chocolate and let cool for 5-10 minutes.
  3. Sift the flour, baking soda, and salt together into a small mixing bowl.
  4. Cream the butter with an electric mixer.
  5. With the mixer running, add the sugar and eggs. Wait until they are well incorporated, then add chocolate and vanilla.
  6. Alternately add the sour cream and flour mixture 1/3 to 1/2 at a time, then slowly add the hot water, and keep mixing until everything is well blended.
  7. Pour into 2 greased and floured cake pans and bake for 35-40 minutes. Cool on wire racks, removing the cakes from the pans when you can do so safely.
  8. While the cake is in the oven and cooling, make the frosting. Wait until the cake is well cooled before icing, because the frosting tends to melt on hot cakes.

Cook's Notes

If you don't have sour cream, plain yogurt works just fine. If you want to give your cake some added flavor, I suggest using some fruit-on-the-bottom yogurt. Raspberry works especially well, but most fruit goes well with chocolate, so feel free to experiment.
