Favorite pasta salad

Normally I view the summer pasta salad season with trepidation, as I'm not a big fan of mayonnaise. But luckily, I've found a solution! This yummy dish, which can be served cold or hot, is an excellent addition to any picnic or potluck dinner.


  • 1 bunch of cilantro leaves chopped (discard stems)
  • 1 box/bag of penne pasta
  • 1 8 oz container of feta cheese (the herbed variety is good)
  • 1 jar of sundried tomatoes in oil (slice into small bits--but KEEP the oil)
  • 2-3 chicken breasts.


  1. Marinate the chicken breasts for a few hours in your favorite marinade. Newman's Own Italian dressing works well.
  2. Cook the pasta.
  3. While pasta is cooking, grill the chicken.
  4. Combine the cilantro, feta cheese, sundried tomatoes and oil in a large pasta bowl. Stir to combine ingredients.
  5. Add drained hot pasta and grilled chicken (cut into pieces).
  6. Stir to combine.
  7. Serve.

Cook's Notes

This can be served cold or hot, and can also be made a day ahead. It's delicious and a crowd pleaser! Also, we typically shred the chicken a bit to make it go further.
