Apple Cake

Ingredients
- 1 1/2 cup unsifted cake flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp ground cinnamon
- 1/2 tsp grated nutmeg
- 1/4 tsp allspice (ground)
- 1/4 tsp ginger
- 1/8 tsp ground cloves
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup granulated sugar
- 3 tbsp firmly packed light brown sugar
- 1 XL egg+ 2 XL egg yolks, at room temperature
- 1/4 cup milk+2 tsp vanilla extract (this makes a funny color!)
- 1 1/2 cups peeled, cored and shredded apples
- 10x sugar for dusting
Method
- Lightly butter a 9in round spring form pan. Preheat oven to 350.
- Sift flour with baking powder and soda, salt and spices onto a sheet of waxed paper (or a bowl. why not a bowl!). Cream butter with a mixer on moderately high for about 1 minute. Beat in granulated sugar and brown sugar and beat for 2 minutes. Beat in egg and egg yolks. Blend in milk/vanilla mixture and beat for one minute. With mixer on low, add flour mixture in 2 additions, beating until particles of first portion get absorbed before adding next. By hand, fold in apples. Spoon batter into the prepared pan. Using a small spatula, push about 1/2 inch of batter up the sides of the pan to keep it level as it rises. Bake on the lower-third level rack of oven for 40-45 minutes, or until tester comes out clean and dry. Cake will pull away slightly from edges of pan. Let cool for 10 minutes before removing spring-ring. Let cool. Dust top with confectioners sugar if desired.
