Chicken Chorizo

I can't remember exactly how my family came across this recipe, but it's become a staple of comfort food. I'm guessing from the chorizo that it's of Spanish origin.


  • olive oil
  • 8 chicken thighs, skinned
  • 1 large onion, sliced
  • 2 large garlic cloves, chopped
  • 1 tsp ground paprika
  • 1 large red pepper, deseeded and sliced into strips
  • 10 oz. chorizo sausage, skinned and sliced
  • 32 fl. oz. chicken stock
  • 6oz green beans
  • 2.5 oz black olives
  • 1 lb orzo
  • salt
  • pepper


  1. Heat the oil and fry the chicken until golden on both sides.
  2. Remove the chicken and add the onions and garlic, and cook until softened.
  3. Stir in the paprika, red pepper, and chorizo, then pour in the stock. Add the chicken back in and season with salt/pepper. Cover and simmer gently for 30 minutes.
  4. Add the beans and orzo, then cover and simmer for 8 minutes more until the pasta and veggies are just tender. Serve immediately.
