Chicken Chorizo

I can't remember exactly how my family came across this recipe, but it's become a staple of comfort food. I'm guessing from the chorizo that it's of Spanish origin.
Ingredients
- olive oil
- 8 chicken thighs, skinned
- 1 large onion, sliced
- 2 large garlic cloves, chopped
- 1 tsp ground paprika
- 1 large red pepper, deseeded and sliced into strips
- 10 oz. chorizo sausage, skinned and sliced
- 32 fl. oz. chicken stock
- 6oz green beans
- 2.5 oz black olives
- 1 lb orzo
- salt
- pepper
Method
- Heat the oil and fry the chicken until golden on both sides.
- Remove the chicken and add the onions and garlic, and cook until softened.
- Stir in the paprika, red pepper, and chorizo, then pour in the stock. Add the chicken back in and season with salt/pepper. Cover and simmer gently for 30 minutes.
- Add the beans and orzo, then cover and simmer for 8 minutes more until the pasta and veggies are just tender. Serve immediately.
