Lightning Coffee Cake

  • Cake
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup sugar
  • 1 cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup hold milk
  • 1 tbs butter
  • Topping
  • 3 tbs butter - melted
  • 3 tbs brown sugar
  • 2 tbs cream
  • 1/2 cup chopped nuts or coconut (optional)


  1. Preheat oven to 375 degrees. Grease 8x8x2 inch baking dish.
  2. Beat eggs and vanilla until thick. Add sugar a little at a time while continuing to beat Sift dry ingredients together and then stir into egg mixture. Heat milk and butter until butter is melted. Add milk and butter to egg mixture and beat until combined.
  3. Bake for about 25 minutes until toothpick comes out clean.
  4. Mix melted butter, brown sugar, cream and nuts or coconut together in small bowl. Spread over baked cake. Put cake under broiler and broil until topping is lightly browned. Watch carefully or topping will burn!

Cook's Notes

This coffee cake is easily doubled and leftovers make a great snack all day long!
