World Famous Banana Pancakes

These don't look as light and fluffy as some recipes, but they are never dried out, and so flavorful! Banana-haters, relax - it's more of a batter enhancement then anything. Serves 3-4 people, and easily doubles, triples, etc.


  • 1 egg
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 1 cup flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2-3 overally ripe bananas
  • 1/2 cup blueberries or chocolate chips (optional)
  • butter
  • maple syrup


  1. Blend egg, milk, and oil in a bowl.
  2. Add all dry ingredients to the mixture, stir until well blended.
  3. Mash bananas to a pulp in a separate bowl. Stir into pancakes with blueberries, chocolate chips, or any other add-ins.
  4. Let stand for 10 minutes
  5. Melt butter on griffle or pan, and cook over medium or low heat until well browned on both sides and cooked through*.
  6. Enjoy with butter and maple syrup!

Cook's Notes

*"cooked through" Because there will inevitably be little moist pockets of banana, make sure you judge the pancake batter on being cooked through, not the banana. Otherwise your pancakes will be little burned disks of less-deliciousness.
