Mimi's Chocolate Cake

This is what my mom made me on my birthday every year growing up. I don't like thick layers of icing, and this one just has one thin delicious layer on top. Can't beat it!


  • For the cake:
  • 2 tablespoons vinegar
  • 1 cup milk
  • 2 eggs
  • 2 cups flour
  • 1 1/2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups sugar
  • 4 squares Baker's unsweetened chocolate
  • 1 cup boiling water
  • 1/4 lb melted butter
  • 1 tablespoon vanilla
  • For the icing:
  • 1 box confectioner's sugar
  • 1/4 lb butter
  • pinch salt
  • 2 teaspoons vanilla
  • 3-4 tablespoons milk.


  1. Mix the vinegar and milk and let stand for 15 minutes
  2. Whisk in the eggs.
  3. In an electric mixer, combine the milk mixture with the flour, baking soda, baking powder, salt, and sugar.
  4. In a small bowl, combine the chocolate, water, butter and vanilla, stirring until chocolate is melted. Add to the electric mixer.
  5. Pour into a 9"x13" baking dish and bake at 350F for 25-30 minutes.
  6. Combine together all icing ingredients and mix well. Ice cake only after it has COMPLETELY cooled.
