Aunt Marie's Irish Soda Bread

I got this recipe from a friend of the family, who used to deliver soda bread to us every St. Patty's Day.

Ingredients

  • 3.5 cups flour
  • 3/4 cup sugar
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tbs baking powder
  • 1.5 cups buttermilk
  • 1 cup raisins
  • 3/4 tsp caraway seeds
  • 1.5 cups buttermilk
  • 2 beaten eggs
  • 1 tbs butter, melted

Method

  1. Preheat oven to 350 degrees.
  2. Combine the dry ingredients in one bowl and the wet ingredients in another.
  3. Mix the wet ingredients with the dry.
  4. Pour into 8" or 9" round cake pan, greased/sprayed with non-stick cooking spray.
  5. Make a cross with flour across the top and trace through it with a butter knife.
  6. Bake for 50-60 minutes.
