TCC's Absurdly Simple Leg of Lamb

A tremendously simple but surprisingly impressive centerpiece to any dinner with company.
Resting the lamb is an important step. Bringing the lamb to room temperature encourages even cooking.
Ingredients
- 5 pound bone in leg of lamb
- juice from half a lemon
- 8 cloves of garlic, chopped
- 3 tablespoons of rosemary, chopped
- 1 tablespoon salt
- Cracked black pepper
Method
- Let lamb rest for 1 hour at room temperature.
- Pre heat oven to 450 degrees. Rub lamb all over with lemon juice, then garlic, rosemary, salt, and pepper.
- Roast in oven at 450 degrees for 30 minutes. Turn temperature down to 350 and roast until internal temperature is 140 ( probably another 35-45 minutes).
- Let lamb rest for 15 minutes then carve.
