TCC's Absurdly Simple Leg of Lamb

A tremendously simple but surprisingly impressive centerpiece to any dinner with company.

Resting the lamb is an important step. Bringing the lamb to room temperature encourages even cooking.


  • 5 pound bone in leg of lamb
  • juice from half a lemon
  • 8 cloves of garlic, chopped
  • 3 tablespoons of rosemary, chopped
  • 1 tablespoon salt
  • Cracked black pepper


  1. Let lamb rest for 1 hour at room temperature.
  2. Pre heat oven to 450 degrees. Rub lamb all over with lemon juice, then garlic, rosemary, salt, and pepper.
  3. Roast in oven at 450 degrees for 30 minutes. Turn temperature down to 350 and roast until internal temperature is 140 ( probably another 35-45 minutes).
  4. Let lamb rest for 15 minutes then carve.
