Spinach Tomato Pasta

Invented recipe. Serves 2. Apologies for the lack of exact quantities.


  • Spaghetti for 2
  • 2-3 tbsp olive oil
  • 1 onion, chopped
  • 2-3 cloves garlic, chopped
  • Red pepper flakes, to taste (depends on how spicy you want it)
  • 125 g/4.4 oz bacon, chopped into small pieces
  • Spinach
  • Cherry tomatoes, sliced in half


  1. Cook spaghetti according to directions on pack.
  2. Add garlic and red pepper flakes and cook for 1 minute. Add bacon, cook til bacon is done. Add onions, cook over medium heat until caramelized (soft, slightly browned), stirring frequently. This takes somewhere around 5-10 minutes.
  3. Add spinach, cook til bright green and starting to wilt.
  4. Toss in cherry tomatoes and cook briefly, til tomatoes begin to soften. Add spaghetti. Top with grated cheese and serve.

Cook's Notes

Bonus Recipe: This makes a damn good sandwich also. I made it with brie and grainy mustard, but a harder cheese would probably be even better to counteract the softness of the onion and spinach.
