Cupboard Tortellini

I'm trying to get rid of everything in my cupboard before moving - this recipe used up all sorts of things, and is SUPER yummy!


  • 1/2 lb tortellini
  • olive oil
  • 1 tin anchovies, minced, any larger bone pieces removed
  • 1/2 package frozen spinach, defrosted
  • 1 can cannellini beans
  • parmigiano reggiano or other delicious hard cheese
  • salt
  • pepper


  1. Cook tortellini according to package directions. Prepare all other ingredients while the water boils.
  2. Drain tortellini. Use the still hot pot to heat up olive oil and anchovies. Once the oil is flavorful, add spinach and beans and cook until warm.
  3. Season with salt & pepper and generously grate cheese over top of each serving. Serve two hungry people immediately!
