Anree's Mac'n'Cheese

  • 2 cups milk, heated in microwave for 2-3 minutes
  • 2 tablespoons unsalted butter
  • 3 tablespoons flour
  • 2 teaspoons mustard
  • 1/2 lb macaroni
  • 1 1/2 cup grated cheddar, plus some extra for topping
  • Pinch salt
  • Ground pepper to taste
  • 1 cup fresh bread crumbs or panko bread crumbs


  1. Cook pasta until barely al dente, drain.
  2. Meanwhile, melt butter in medium saucepan over medium-high heat until foaming stops. Add flour and cook, whisking constantly, 2-3 minutes, until flour is pale brown. Add hot milk 1/2 cup at a time, allowing sauce to come back to a simmer and thicken each time.
  3. Simmer sauce 5 minutes, stirring occasionally, then remove from heat.
  4. Stir in: Cheese, mustard, salt & pepper, stir to combine. Combine with pasta, then pour into greased 2 quart baking dish. Top with bread crumbs, then extra cheese.
  5. Bake at 400 F for 20 minutes. Let sit 10 minutes before serving.

Cook's Notes

Any combination of melty cheeses would work in this.

Don't forget to take the sauce off the heat before you add the cheese
