Corn Fritters

Corn fritters are delicious corn pancakes.

This was my grandma's recipe, got it from my mom.


  • 2 eggs
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 can creamed corn


  1. Use large frying pan and put enough vegetable oil in pan to coat. Heat on medium flame.
  2. Mix everything together and drop by small spoonfuls into hot pan. Fritters are ready to flip over when they start to get holes in them. Flip and fry for another minute or so.
  3. Place on dish with paper towels to soak some of the oil.

Cook's Notes

If you don't have canned creamed corn, you can make your own with regular corn.

Don't make the corn fritters too thick, or else they will burn/be undercooked instead of done.

Unfortunately, these don't reheat well.
