Zucchini Bake

This is my dad's mom's recipe, though I got it from my mom.


  • 3 small (8") shredded zucchini
  • 1 cup chopped onion
  • 2 tbs butter (or olive oil)
  • 3 tbs flour
  • 1 cup grated Jarlsberg or Swiss cheese (or more to taste)
  • 2 tbs butter
  • sprinkling of bread crumbs


  1. Saute onion in about tbs butter/oil until translucent.
  2. Add zucchini and cook 2 to 3 minutes.
  3. Add 1 tbs butter/oil, then add flour and mix everything.
  4. Add cheese and remove from heat.
  5. Place in buttered casserole dish. Sprinkle bread crumbs, butter and more cheese over top.
  6. Bake 15 to 20 minutes at 425 degrees.

Cook's Notes

NOTE: olive oil can be substituted I'm sure during the sauteing process, but use butter for the top if you are going to add that. Flour isn't necessary, but it will thicken the mixture.

If you have a shredding blade for your food processor, it works great to get the zucchini shredded. Otherwise, use a large grater.
