Brown Stew

Nothing particularly special about this, but it makes a good meal.


  • 2 tbsp olive oil
  • 1.5 lbs. chuck beef, cubed
  • 1 tbsp cooking sherry
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp tomato paste
  • 2 tsp thyme
  • 1 tsp rosemary
  • 1 lb. carrots, peeled and chopped
  • 3-4 cups beef broth or water
  • salt and pepper to taste


  1. Heat the oil in a medium pot, salt and pepper the beef, and cook until browned on all sides.
  2. Remove the beef to a plate, deglaze the pot with the sherry, and cook the onions and garlic in the gravy.
  3. When onions are transparent, add the tomato paste, thyme and rosemary and reduce the mixture for 1-2 minutes.
  4. Add the carrots and beef to the pot and fill with broth or water to cover. Let simmer for at least an hour
