Brown Stew

Nothing particularly special about this, but it makes a good meal.
Ingredients
- 2 tbsp olive oil
- 1.5 lbs. chuck beef, cubed
- 1 tbsp cooking sherry
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp tomato paste
- 2 tsp thyme
- 1 tsp rosemary
- 1 lb. carrots, peeled and chopped
- 3-4 cups beef broth or water
- salt and pepper to taste
Method
- Heat the oil in a medium pot, salt and pepper the beef, and cook until browned on all sides.
- Remove the beef to a plate, deglaze the pot with the sherry, and cook the onions and garlic in the gravy.
- When onions are transparent, add the tomato paste, thyme and rosemary and reduce the mixture for 1-2 minutes.
- Add the carrots and beef to the pot and fill with broth or water to cover. Let simmer for at least an hour
