Sausage and Peppers

This was a staple of my college diet, courtesy a recipe from my mother. It's super-easy and super-delicious.

The recipe as below feeds about 3 people with no leftovers.


  • 1 package Italian sausages
  • 2-3 bell peppers
  • 1 large or 2 small onions (Vidalia or other sweet)
  • 1-2 cloves garlic or 1 stp garlic powder
  • Salt to taste
  • Pepper to taste
  • 3 tbsp olive oil


  1. Place olive oil in a large frying pan and heat.
  2. Slice onions and peppers, chop garlic.
  3. Add onions, peppers, and garlic to the pan and season with salt and pepper.
  4. Cook, stirring occasionally, until the onions start to become soft and coated.
  5. Add sausage nad cook about 5 minutes uncovered, turning the sausage once.
  6. Cover and cook another 15-20 minutes, until sausages are cooked through.

Cook's Notes

You could also cook this in the oven (which takes longer but requires less attention), with the following changes.

Place onions, garlic, pepper, salt, pepper, and olive oil in a baking dish.

Toss to coat.

Add sausage and bake at 350 for approximately 30-45 minutes, stirring throughout.
