Arugula Pesto

This is a great recipe for leftover arugula that you don't want to see go to waste.
Ingredients
- 2 cups arugula
- 2 tablespoons olive oil
- 2 tablespoons grated parmesan cheese
- 1 clove garlic
Method
- Place all ingredients in food processor.
- Mix on "chop" speed until mixture resembles a paste.
- Serve with hot pasta.
