Arugula Pesto

This is a great recipe for leftover arugula that you don't want to see go to waste.


  • 2 cups arugula
  • 2 tablespoons olive oil
  • 2 tablespoons grated parmesan cheese
  • 1 clove garlic


  1. Place all ingredients in food processor.
  2. Mix on "chop" speed until mixture resembles a paste.
  3. Serve with hot pasta.
